Mrs Jones sources local, Vancouver Island, Canada fruits and vegetables to use in the Jams and Jelly’s whenever possible. 

Mrs Jones handcrafts her own marmalades using only high quality citrus and the traditional three day  technique.

Mrs Jones uses Canadian Natural Refined Sugar.   Each recipe calls for different ratios of fruit and sugar as each carries different characteristics in taste, sweetness and acidity.  The end result, compliments the fruit or vegetable, NOT the sugar.

What helps jams to “set” is the fruits natural pectin.  For some fruits, there’s not enough natural pectin within the fruits therefore a natural, pure apple pectin is used as an “aid”.   The process to make our jams and jelly’s is slow, to allow as much of the natural pectin to work along side the added pectin, sugar and lemon juice.

Mrs Jones Jams and Jelly’s do not contain preservatives or food colouring.   Therefore, it is important to refrigerate our products and actually enjoy them fully within one month of opening the goodness revealed under the cap!  Always be sure to use a clean spoon or utensil to avoid any chance of cross contamination.   Mrs Jones Jams and Jelly’s are stable for 1 year and Marmalade for 2 years.  Each jar is labelled with the best before date on the bottom.

Mrs Jones Jams and Jelly’s are made in our very own, Vancouver Island Health Authority inspected and certified Commercial Kitchen.  The ONLY products made in this facility is our Jams and Jelly’s.  The utensils, pots and all items in this facility are used only for this purpose.  So although we cannot claim our kitchen to be “certified” gluten free or vegan it could be.

Mrs Jones Jams, take enormous pride in producing actual small batch, truly flavourful products.  We do not use automated machines, except for some labelling.  Every batch is made with integrity, time, and ingredients that will produce taste unmatched in the general market place.
